The WAYO CHEF is a Japanese-inspired, all-purpose chef knife that blends minimalistic, traditional Japanese design elements with bold, modern design elements championed by modern, Western-style chef knives. Limited to 100 knives, each one is handmade and one of a kind.
The name WAYO comes from the handle design of The WAYO Chef. Part WA (traditional Japanese), and part YO (western), its design draws on complimentary characteristics from both styles. The octagonal shape derived from the common WA design provides rotational reference and easy manoeuvrability of the blade, while the belly of the YO design provides a comfortable ‘racket’ grip associated with western-style chef knives.

Every WAYO is handmade and unique, however there are some defining features that characterise a 100 Knives WAYO Chef. The blade profile, length and height, the handle shape and construction are all common to every knife. And each WAYO is hot stamped with a 100 Knives makers mark and hand sharpened.
FEATURES

Bolster Cap

The bolster cap is a feature designed to customise the overall weight and balance point of each knife as it is completed. The weight of the bolster cap is adjusted on each WAYO to suit the varying blade thicknesses and grinds, as well as the different handle materials used.

Blade Styles

While the cutting edge on each WAYO is hand-sharpened and razor sharp, the geometry of each blade is varied. While most will be slightly convexed to a flat grind, some will have hollow, s-grinds, full convex, and more. See the specification on each listing in the store.

Materials

Exotic timbers, resins, and metals are combined with handmade, layered, or patterned steel. Typically, a combination of 15n20 and 1084 is used for Damascus, while a variety of premium cutlery steels are selected for the core of san-mai blades.
